Back To School Pencil Cookies

I love making fun treats with the girls, especially cookies, but sometimes I just don’t want to bring out all the ingredients and make them from scratch. During those times, I am thankful for already made cookies. Easy and guaranteed yummy and we handle the decorating.

I saw these cute little pencil cookies floating around on Instagram and decided they looked easy enough to make the night before the first day of school. You only need 4 ingredients to make them, the main ingredient being a pack of wafer cookies. A little icing, food coloring and mini chocolate chips, and you’ve got yourself the cutest little pencil cookies. We ate most of ours the night we made them, but saved a few for our daughter to take in her lunch the next day. They were a hit!

Ingredients

  • One pack vanilla wafers
  • One tub icing
  • Red food coloring
  • Mini Chocolate Chips
  • Ziplock bag for icing

Instructions

  1. Cut corners off one side of each wafer cookie.
  2. Split icing between two ziplock bags. In one bag, place a few drops of red food coloring and mix until it turns pink. Cut corners off of the icing bags.
  3. Put the white icing on the cut end of the “pencils” and the pink icing on the other ends.
  4. Put a chocolate chip at the tip of each pencil. Try not to eat them all at once! 🙂
